Ingredients
  • olive oil
  • 2 cups Sherry wine
  • juice of 1 clementine or tangerine or orange if you don’t have a clementine
  • juice of 1/2 a lime
  • 1-2 tbsp South of My Border Mexican Blend or equal mix of cumin, chili powder, paprika, oregano
  • 4-6 short ribs
  • 1 clove garlic diced
  • 1/2 tsp salt
  • bay leaf

  • juice of 1/2 a lime
  • 1-2 tbsp South of My Border Mexican Blend or equal mix of cumin, chili powder, paprika, oregano
  • 4-6 short ribs
  • 1 clove garlic diced
  • 1/2 tsp salt
  • bay leaf

Instructions
  1. In a bowl, mix the sherry, tbsp olive oil, juice of clementine and lime, South of My Border Mexican Blend or substitute spices and marinate short ribs for at least 2 hours.
  2. In a deep, coverable frying pan, sauté diced garlic clove in olive oil and then brown the ribs for about 2-3 minutes per side. Add marinade, salt and bay leaf and cover. Bring to a boil, and then turn heat to low-medium low and bring to a simmer.
  3. Simmer for 3 hours. Halfway through, taste braising liquid to adjust salt content if needed.
Crockpot Instructions
  1. In a bowl, mix the sherry, tbsp olive oil, juice of clementine and lime, South of My Border Mexican Blend or substitute spices and marinate short ribs for at least 2 hours.
  2. In a large frying pan, sauté diced garlic clove in olive oil and then brown the ribs for about 2-3 minutes per side. Transfer to crockpot and add marinade, salt and bay leaf and cover. Set on medium low (4-6 hours). Halfway through, taste braising liquid to adjust salt content if needed. Finish on the BBQ if you desire
