Ingredients
  • 2-3 red potatoes
  • 1 tsp salt
  • 2-3 tbsp olive oil
  • 1/2 onion diced
  • 3 cloves garlic sliced
  • 2 chicken breasts diced fine
  • 1 tbsp My Leaning Tower Italian Blend or create an equal mix of dry minced garlic, parsley flakes, basil, and a pinch of red pepper flakes
  • 1 cup shredded brussels sprouts can substitute spinach if you like
  • 1 1/2 tbsp flour
  • 1 cup Marsala wine
  • 1/2 cup water or chicken broth
  • 1/2 tsp ground black pepper
  • 2 tbsp red wine vinegar
  • bread crumbs
  • freshly shredded Parmesan cheese can substitute grated parmesan cheese

Instructions
  1. Shred the potatoes into a large strainer and squeeze the excess moisture out by pressing with a paper towel. Place the potatoes in a bowl with the salt and mix thoroughly to help prevent the potatoes from browning early.
  2. Preheat oven to 350 Degrees
  3. In a large, deep skillet (12-inches or more) or oven safe pan, heat olive oil on medium high heat and add the onion, garlic and tomato with a pinch of salt and pepper and sauté for about 2 minutes.
  4. Add the chicken and My Leaning Tower Italian Blend, and Brussels sprouts (or spinach) and sautee for another 2-3 minutes until chicken is browned.
  5. Add the potatoes and sautee for another 2 minutes or so.
  6. Add the flour and stir to coat everything. It will look a bit “clumpy”- that’s ok.
  7. Add the Marsala wine, water or chicken broth, ground black pepper and vinegar and stir to incorporate everything. Bring to a slow boil.
  8. Once boiling, place in oven.and bake for about 15 minutes.
  9. Then carefully remove, sprinkle bread crumbs and Parmesan cheese on top and broil for 4-5 minutes until crispy and golden brown.
  10. Let sit for 10 minutes prior to serving.
