Combine sauerkraut, chopped corned beef, mayonnaise, ketchup , Swiss cheese, caraway seeds and half of the green onion in a bowl. Add a pinch of salt and pepper and mix thoroughly. Set aside.
Prepare Russian dressing by combining all ingredients in a bowl, mixing thoroughly and refrigerating until you serve.
Take a won ton wrapper and place it in your hand.
Take a tsp of filling and place in center of won ton wrapper.
Using your finger, wet the edges of the wonton wrapper with water, and fold the wonton in half with covering the filling and lining up the edges of the wonton wrapper. Press to seal
Then alternate folding and pinching to form “pleats”. Fold the rim and then pinch, fold and then pinch. Set the finished wontons on a plate. For additional instructions on making the pleats, see my video on wonton wrappers above.
Once all the dumplings have been made, heat the canola oil in a coverable frying pan. Pan fry the dumplings on each side for 2-3 minutes until they become nice and golden brown.
Add the water carefully to the pan and cover and let the dumplings steam for 3 minutes.
Take off the heat, uncover and let sit for 5 minutes before serving and serve with some Russian dressing.
