Pork with Spiced Curry Apple Sauce
Pork with Spiced Curry Apple Sauce

Ingredients
- flour
- pork roast or brisket .5 lbs per person
- olive oil
- salt
- ground black pepper
- 1/4 onion chopped
- 2 cloves garlic sliced
- curry powder
- chili powder
- Sherry wine
- 1/2 cup chicken broth
- cranberry juice
- cinnamon
- garlic powder
- 2 apples peeled
- butter
- flour

Instructions
- Flour pork- dust all sides with a little flour
- In a large, deep, coverable pan or pot, sauté garlic and onions in about a tbsp olive oil with a dash of salt and pepper on medium high heat for about two minutes until onions become translucent. Add a pinch of curry powder (enough to spread around, don’t go crazy) and a pinch of chili powder.
- Brown each side of pork. Remove pork and set aside
- In same pan or pot, add 1/2 cup of cranberry juice, 1 tsp curry powder, 1 tsp chili powder, 1 tsp salt, 1 tsp pepper and 1 tsp garlic powder, 1cup sherry and 1/2 cup of chicken broth. Bring to boil then lower heat to medium low and let simmer. Add pork, cover and let simmer for 3 hours. Read instructions for sauce below.
SAUCE:
- Halfway through cooking the pork, scoop out about 2 cups of the pork juices and place into a pot. Peel and cut up apples and boil them in the juices for 20 minutes or so. Mash apples in pot and add a pinch of curry powder, 1/2 tsp of cinnamon and slowly stir 2 tbsp each of butter and flour into sauce until sauce has thickened. let simmer for 30 minutes. Keep covered and reheat before serving with pork.
- SLICE PORK AGAINST GRAIN, POUR GRAVY OVER MEAT AND SERVE IT, [email protected]!
Crockpot Instructions

- Brown each side of pork. Transfer pork, onions and garlic to crock pot.
- Add 1/2 cup of cranberry juice, 1 tsp curry powder, 1 tsp chili powder, 1 tsp salt, 1 tsp pepper and 1 tsp garlic powder, 1cup sherry and 1/2 cup of chicken broth. Cover and set crock pot to medium low (6 hours). Let simmer. Read instructions for making sauce above.
