Ingredients
  • 1/2 can whole cranberry sauce
  • 1/4 cup pineapple juice
  • 1 tbsp Worcestershire sauce
  • 1/2 tbsp Jamaican Me Jerky Caribbean Blend equal mix of thyme, ground black pepper, allspice, paprika and a pinch of cinnamon and cayenne pepper
  • 2 lbs chicken wings (about 10)
  • olive oil
  • 1/4 onion diced
  • 3 cloves garlic sliced
  • 1/2 red pepper chopped
  • 1/2 Jalapeño diced fine
  • 1/3 cup chicken broth

Instructions
  1. Combine the cranberry sauce, pineapple juice, Worcestershire sauce, 1 tbsp olive oil or sesame oil and Jamaican Me Jerky Caribbean Blend or substitute spices and stir thoroughly. Place the chicken wings in and let marinate for at least an hour (overnight is best).
  2. Preheat oven to 350 degrees.
  3. In a large, oven-safe, deep frying pan, sauté the onion, garlic, red and jalapeno peppers for about 2 minutes on medium high heat until onion is translucent.
  4. Remove the chicken from marinade and add the chicken to pan, searing on all sides (about 2-3 mins per side).
  5. Add the rest of the marinade and chicken broth to pan, stir and bring to a simmer. Place the pan into the oven and bake for about 45 minutes. Sauce will reduce down during the cooking process.
  6. Remove the pan from the oven using oven mits, coat the wings with the sauce, return to oven and broil for 3-5 minutes. Let sit for about 5 minutes before serving. Can serve the onions and peppers on the side.
