Ingredients
  • 1/2 can whole cranberry sauce
  • 1/4 cup pineapple juice
  • 1 tbsp Worcestershire sauce
  • 1/2 tbsp Jamaican Me Jerky Caribbean Blend Or equal mix of thyme, ground black pepper, allspice, paprika and a pinch of cinnamon and cayenne pepper
  • 2 lbs country style pork ribs
  • olive oil
  • 1/4 onion diced
  • 3 cloves garlic sliced
  • 1/2 red pepper chopped
  • 1/2 Jalapeño diced fine
  • 1/3 cup chicken broth

Instructions
Stovetop Instructions
  1. Combine the cranberry sauce, pineapple juice, Worcestershire sauce and Jamaican Me Jerky Caribbean Blend or substitute spices and stir thoroughly. Place the pork in and let marinate for at least an hour (overnight is best).
  2. In a large, coverable pot, sauté the onion, garlic, red and jalapeno peppers in about a tbsp of olive oil for about 2 minutes on medium high heat until onion is translucent.
  3. Remove the pork from marinade and place in pan, searing on all sides (about 2-3 mins per side).
  4. Add the rest of the marinade and chicken broth to pan. Stir thoroughly, cover and bring to a low boil. Lower heat to medium low and let simmer for about 2-3 hours. (alternatively you can transfer to an oven-safe dish, cover and place in oven for 2-3 hours at 300 degrees)
  5. Remove from heat and use two forks to pull the pork apart and shred. Remove any bone fragments if you used pork with bones attached.
  6. Serve on bread...

Crockpot Instructions
  1. Combine the cranberry sauce, pineapple juice, Worcestershire sauce and Jamaican Me Jerky Caribbean Blend or substitute spices and stir thoroughly. Place the pork in and let marinate for at least an hour (overnight is best).
  2. In a large, frying pan, saute the onion, garlic, red and jalapeno peppers with a dash of salt and pepper in a tbsp of olive oil for about 2 minutes on medium high heat until onion is translucent.
  3. Remove the pork from marinade and place in pan, searing on all sides (about 2-3 mins per side). Transfer everything to the crockpot.
  4. Add the rest of the marinade and chicken broth to crockpot. Stir thoroughly, cover and set to medium high (4 hours) and let simmer.
  5. Remove from heat and use two forks to pull the pork apart and shred. Remove any bone fragments if you used pork with bones attached. Serve over rice, on bread or as shown here with our pan-fried potato dumplings.
